This sure beats my Mom's pimento cheese! Such heat and flavor! I loved it. My chili sauce was on the hotter side, and it really made this dance. Thanks for sharing!

I really enjoyed this tasty sandwich Nancy. It was sharp, tangy and robust, a beautiful blending of flavors and textures. You could taste all the individual ingredients, nothing was overpowering. Truly a taste experience. Thank you for sharing.

Perfect for a 50s-60s vintage party as an appetizer, when pimiento-stuffed olives and special cookie-cutter shapes were considered gourmet. The olives overwhelmed me, so I think these should be served as appetizers, only, too piquant for regular lunch-time sandwiches. These are mis-categorized as sandwiches, as the ingredients do not list any bread, whatsoever; this recipe is really just a spread. I would have used a star cookie cutter if I had found it. I served on Pepperidge Farm Very Thin White Bread, which would have been considered gourmet at that time. Use this spread for a retro-party, and serve some good martinis on the side. To complete the mood, play Frank Sinatra, Dean Martin, or Perry Como. Made for 1-2-3 Hits tag game.
