The sauce mixture turned out thicker than I expected, and so I had to spread it on the potatoes rather than pour it. I used Feta cheese with a couple of herbs and spices becuase it has much less sodium than bleu cheese. Final product was very tasty indeed.

  1. Pre-heat the oven to 375.
  2. Boil the potatoes.
  3. Allow to coolslightly and dice.
  4. Place in a casserole dish.
  5. Melt the butter in a saucepan.
  6. Whisk in the flour and cook for 5 minutes, stirring frequently.
  7. Whisk in the milk and cream.
  8. Reduce the heat and simmer for 20 minutes.
  9. Whisk in the cheese until blended.
  10. Pour over the potatoes.
  11. Top with the breadcrumbs and bake for 25 minutes.
