This was a wonderful tasting dip/spread. We love blue cheese so it was right down our alley. The roasted garlic just made it. We'll be using this from now on. Thanks for posting this little gem of a recipe.

Lovely dip. I only made one cup but what a delight. I probably used more garlic than called for, but we love garlic. We had it with both crackers and a little with our steaks.

Was looking for something to use up some blue cheese that would also help dilute the blue cheese flavour for a work shout. Blue cheese lovers enjoyed/loved this, non blue cheese fans were still not converted. I used 75g creamy blue cheese, 1/4 cup Mayo and Sour Cream eacg, 1 tsp minced Garlic, 1/2 cup Cream Cheese, about 2-3 Tbsp sliced spring onions & 5 drops Tabasco, freshly ground black pepper. Chill overnight and served with carrots and crackers. Thanks from the blue cheese lovers.

This is delicious! It's so good with the blue cheese and roasted garlic. My whole family and guests for the football party gobbled it up! Thanks for sharing another winner, Kittencal.

Fabulous - I used yellow onions and a whole head of Garlic which was over a TBS but this is great stuff. Thank you Kittencal !

Yes! This is one of those recipes that is right up my alley...I have been making something like it but with feta cheese. For this I followed the recipe but used neufchatel cheese, 3 cloves of fresh garlic (I love garlic), 1/2 tsp black pepper and 1/2 tsp crushed red pepper flakes. I love it with fresh veggies! The only downside to the recipe is the cost of ingredients...well...and the calories!...but I'll still be making it again. Made for 1-2-3 hit wonders.

Kittencal - this IS a most amazing dip - everyone loved it! I made it "as is" and found the consistancy perfect and it tasted so good with fresh veggies. I can only imagine how wonderful it will be on grilled steaks. I roasted 1 small head of garlic and found that it ended up being just a little over 1T of garlic. I put in the 1T when mixing and the next day after a taste test decided to put the remainder in. If you love blue cheese this is a great change to the usual ranch dip with a vegetable tray. YUM.
