All the yummy goodness of a bacon, lettuce, tomato, and cheese sandwich in the form of a soup. PERFECT for a chilly Fall day!

  1. Melt butter in a large stock pot.
  2. Add celery, red pepper, tomatoes, onion, and garlic. Saute until vegetables are tender.
  3. Add flour and mix well in to vegetables. Cook for about 5 minutes to cook out the raw flour taste.
  4. Slowly whisk in chicken broth.
  5. Add cooked bacon, basil, thyme, salt and pepper.
  6. Cook for about 30 minutes. Taste occasionally and adjust seasonings as needed.
  7. Stir in cheese and instant mashed potatoes. Allow cheese to melt completely. You may omit the instant potatoes if you want a less thick soup.
  8. Serve topped with shredded lettuce, bacon bits and croutons.
