This is a differnt twist on the baked potato. Super good. So tasty. And good for ya too. No muss, no fuss light dinner.
- 2 baking potatoes
- 4 slices bacon, cooked and crumbled
- 6 grape tomatoes, cut in fourths
- 2 tablespoons sour cream
- 1⁄4 cup shredded lettuce
- Cook potatoes as if you were baking a regular potato, until it's fork tender.
- Split down the middle, stuff with 1 Tbsp each sour cream, then shredded lettuce, tomatoes, and top with bacon.
