Blt Baked Potato

"This is a differnt twist on the baked potato. Super good. So tasty. And good for ya too. No muss, no fuss light dinner."

• Yields: 2 Baked Potatoes

ingredients

• 2 baking potatoes
• 4 slices bacon, cooked and crumbled
• 6 grape tomatoes, cut in fourths
• 2 tablespoons sour cream
• 1⁄4 cup shredded lettuce

directions

1. Cook potatoes as if you were baking a regular potato, until it's fork tender.
2. Split down the middle, stuff with 1 Tbsp each sour cream, then shredded lettuce, tomatoes, and top with bacon.
