We love BLT's and we love avocados. Combined you get a really healthy meal for not many calories.

Ingredients Nutrition

  • 2 large avocados
  • 1 teaspoon lemon juice
  • 1 12 cups bread, chopped into cubes
  • 1 medium tomatoes, cored diced
  • 13 cup lettuce or 13 cup spinach leaves
  • 14 cup cooked bacon, chopped
  • 2 tablespoons mayonnaise
  • salt and pepper

Directions

  1. Preheat oven to 400 degrees F.
  2. Halve the avocados and pit. You can scoop out a little of the Avocado to make more room. Brush inside and out with the lemon juice.
  3. Place on a parchment lined baking sheet. Set aside.
  4. In a medium bowl, add the bread, tomato, lettuce, bacon, mayonnaise, salt and pepper and any avocado you scooped out. Toss lightly to combine.
  5. Fill each avocado half with 1/4 of the bread mixture, packing lightly.
  6. Bake until the bread stuffing begins to brown (10-13 minutes). Remove and serve immediately.
