Directions

  1. Coat blintzes on both sides with butter.
  2. Sprinkle with cinnamon.
  3. Place blintzes in buttered 9x13" pan, one inch apart so that blintzes and soufflé can be served.
  4. In blender, combine eggs, sour cream, sugar, and vanilla.
  5. Pour over blintzes.
  6. Bake at 350F 40 minutes, until soufflé puffs up.
