I was looking for a thick and fluffy fruit dip made without marshmallow cream. They are few and far between, so I made up my own. It goes great with any fruit and the flavor can be changed to your liking. **Note: I used sugar-free banana instant pudding mix to make it more carb-friendly for my diabetic son, but you can use any variety of instant pudding you'd like. I think I will try it with chocolate pudding next, omitting the lemon juice.
- 8 ounces reduced-fat cream cheese, softened
- 1⁄2 cup light sour cream
- 1 ounce sugar-free fat-free banana cream pudding mix (4-serving size box)
- 1 teaspoon vanilla extract
- 2 teaspoons lemon juice
- 8 ounces Cool Whip
- Whip softened cream cheese with electric mixer until fluffy. Add sour cream, pudding mix, vanilla, and lemon juice. Mix 2 minutes, or until well combined and there are no lumps. Gently fold in Cool-Whip. Serve with a variety of fresh fruit.
