Blackened Chicken

"Turn off the smoke detector when you cook this chicken dish! =0...Oh, just love that cast iron...=) Serve with beans and rice, a salad and YUM!!"

  • Let the chicken come to room temperature before using.
  • Cover chicken with butter until well coated.
  • Heat a cast iron skillet over high heat until very hot.
  • Roll each chicken breast into about 1/2 tsp. seasoning mix (I use my hands).
  • Immediately place the chicken pieces skin side down in the skillet to sear.
  • Pour about 1 teaspoon of the butter on top.
  • Cook about 2+ minutes, until a crust forms on the underside.
  • Turn and pour another 1 teaspoon of the butter on each of the chicken pieces.
  • Cook until just cooked through.

  2. Just what I was looking for. I wanted to make blackened chicken to go on top of my alfredo and this worked perfectly. I reduced the salt to 1 Tbs and cooked the chicken on the grill to keep the smoke out of the house. Thanks for a great recipe that I can use again and again - I put the leftovers into a spice bottle for next time. Should last us a while!
     
  3. this was great I bought the blackened season already mixed and did hit it with a little liquid smoke, so it would taste like it came off the grill. My kids told me it was the best chicken ever. My husband ate until he got sick. Will make again thanks for sharing.
     
  4. Yum, yum, yum! After reading other reviews, I cut the salt back by half, and it tasted great. I did add about 1/4 c hot sauce to the butter, but didn't drizzle the additional butter on both sides of the chicken as it was cooking. I was trying to mimic the sandwiches at one of our favorite bar and grills here, so I added 2 tsp butter to the pan after removing the chicken, tossed in some thinly sliced green pepper and onion and sauteed it, scraping up some of the crusted black goodies from the pan as I did. I toasted Kaiser rolls, placed the chicken on, topped with provel cheese, stuck it under the broiler until the cheese was melted and then topped with a good helping of the onions and peppers with lettuce, tomato, pickle on the side. Only change I will make next time is to cut back on the cumin just slightly, and use smoked paprika. But this was just fantastic. Thanks so much for posting!
     
  5. Loved the seasoning! The spice factor was perfect - a little too much salt ... but I measured by eye, so probably my fault. Delicious .... and yes, my smoke alarm went off. My boyfriend found it hilarious.... Served on an onion roll with lettuce, tomato, red onion and mayo. Perfect!

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
