These whimsical banana boats are enhanced by the flavours of rum and orange

  1. With toothpick, pierce skins of bananas all over.
  2. Place in 8 inch square baking dish.
  3. Microwave at HIGH 4-5 minutes or until blackened all over.
  4. Let cool slightly.
  5. Meanwhile in a small bowl, mix together brown sugar, orange rind, and rum, if using, and orange juice, butter and cinnamon.
  6. Microwave at HIGH for 1 minute or until butter has melted and sugar has dissolved.
  7. Stir well.
  8. Transfer bananas to individual plates.
  9. Slice through skin lengthwise.
  10. Spread skins apart slightly and press in ends to form boat shapes.
  11. Spoon 2 Tablespoons sauce into each banana.
  12. Serve immediately.
