Blackberries Mix
- 1 quart blackberry, rinsed
- 1 cup water
- 1 cup sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon lemon extract

Dumplings
- 1 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon nutmeg
- 2⁄3 cup milk
directions
- Mix berries,water, 1 cup sugar, 1/4 t salt and lemon in large, wide saucepan.
- Bring to a boil.
- Reduce heat and simmer 5 minutes.
- For dumplings: Combine flour,1 T sugar, baking powder, 1/4 t salt, nutmeg and milk.
- Stir until mixed.
- Drop by TBS into berry mixture.
- Cover tightly and simmer 15 minutes.
- Serve in bowls with a dollop of whipped cream.

I had to chuckle when I saw that most folks liked a little less sugar. It's a Native Appalachian cultural trait to LOVE sweets and this recipe is reflective of a true Appalachian dish. I had these for the first time (same recipe) 40 years ago when an old woman made them for us boys. She used canned blackberries the first time I had them but we were quick to pick her all she wanted after that. Blackberry Dumplings ultimately became my favorite desert but hardly anyone makes them anymore because kids won't go out and pick fresh blackberries these days, (too many video games!). Blackberry Dumplings are also benefitted by some vanilla ice cream on top. This is a super recipe!

OMG!!! These were wonderful...iLUV BLACKBERRIES..but didn't think I would like them cooked..the mixture cooked down and became thick, ooey, gooey and SWEET...WONDERFUL..family all LUV THEM...only thing I did different was add a little softened butter and some cinnamon to the dumpling mixture..and cooked the dumplings for about 5 minutes longer than called for..definitly keeping this recipe!!! Going to add a scoop of vanilla ice cream and dig in!!!

I used a variation on the blackberry mix with 1/2 cup of sugar and 1/2 cup of Splenda (the equal measure type), and it was very good. I'm from Kentucky, so I like the traditional sweetness. Instead of the dumpling recipe here, I used a Bisquick and milk recipe and rolled them, which is how I prefer my dumplings. Yum!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
