Blackberry Cake

This is another of those recipes that I am posting for someone else, but want to try. I think that I would frost this cake with a cream cheese frosting.

I haven't cut into it yet but it didn't seem to rise well and it may be that I followed the instructions regarding beating the egg whites with cream of tartar while the rest of the batter sat there. Maybe I should have had it prepared and folded it in. By the time it was stiff the other batter looked deflated. Was there something I could have done differently. Disappointed. It was for a birthday.

  1. Preheat oven to 350 degrees.
  2. Cream shortening and sugar.
  3. Sift dry ingredients all but baking soda.
  4. Stir baking soda and milk in.
  5. Add alternately dry ingredients, eggs and milk mixture.
  6. Lastly fold in berries.
  7. Pour into a greased and floured pans.
  8. Bake for 25- 35 minutes or until done.
