Blackberry Cake

"This is another of those recipes that I am posting for someone else, but want to try. I think that I would frost this cake with a cream cheese frosting."

  • Preheat oven to 350 degrees.
  • Cream shortening and sugar.
  • Sift dry ingredients all but baking soda.
  • Stir baking soda and milk in.
  • Add alternately dry ingredients, eggs and milk mixture.
  • Lastly fold in berries.
  • Pour into a greased and floured pans.
  • Bake for 25- 35 minutes or until done.

I haven't cut into it yet but it didn't seem to rise well and it may be that I followed the instructions regarding beating the egg whites with cream of tartar while the rest of the batter sat there. Maybe I should have had it prepared and folded it in. By the time it was stiff the other batter looked deflated. Was there something I could have done differently. Disappointed. It was for a birthday.
     
  2. This is a great cake. The directions are a bit difficult (stir baking soda & milk into what?) but I managed to turn out a yummy cake. I used buttermilk, and added the vanilla to that. I added the baking soda to the rest of the dry ingredients. It all worked out great. I used a 9"x13" pan & cooked it for 50 minutes. I sprinkled the top with powdered sugar. It's a great cake!! I think it needs more blackberries (dh's comment was "it's not very blackberrish") Thanks for posting!
