Blackberry Breakfast Bars

  • For filling, in a medium saucepan combine berries, sugar, water, lemon juice and 1/2 teaspoon cinnamon. Bring to a boil. Reduce heat. Simmer, uncovered, for about 8 minutes or till slightly thickened, stirring frequently. Remove from heat.
  • In a mixing bowl stir together flour, oats, brown sugar, 1/4 teaspoon cinnamon, and baking soda. Stir in melted margarine till thoroughly combined. Set aside 1 cup of the oat mixture for topping. Press remaining oat mixture into an ungreased 9x9x2" pan. Bake in a 350 oven for 20-25 minutes.
  • Carefully spread filling on top of baked crust. Sprinkle with reserved oat mixture. Lightly press oat mixture into filling.
  • Bake in the 350 oven for 20-25 minutes more or till topping browns.
  • Cool in pan on a wire rack. Cut into bars.

  1. Absolutely delicious! Being just out of blackberry season I had to resort to frozen raspberries, but the taste was so AMAZING! The base was firm and tasty, the berry layer was sweet and full of fruity goodness and the crumb-style topping sealed the deal. I will definitely be making in the future because everyone loved it.
     
  2. Very easy, and scrumptious! Will double the batch next time. I also used 3 cups of mixed berries (blackberry, raspberry, blueberry) +one more tablespoon of cinnamon. ?

  4. These are very good! I used 3 cups of blackberries and an extra tablespoon of sugar for the filling.
     
  5. Great flavor and texture but 1/18 is a serving of a 9 in. square pan?- get real no one would consider 1/18 a serving!

Tweaks

  1. This has become my favorite way to use up leftover berries at the end of the week. For the filling instead of the recommended 2 cups, I will use however much is left in a container of berries (have tried with blackberries and strawberries thusfar) which is usually closer to 1 cup or a little less. Then I use enough water and lemon juice to cover, making it with closer to a simply syrup 1:1 ratio for liquid:berries. I also sub honey for the brown sugar in the filling, I think it works better with the berry flavor. Once it’s boiling, I mash the berries so its a fairly smooth consistency, then will use a cornstarch slurry to thicken it to closer to the consistency that a hot jam would be. Leaves me with enough filling for the bars, sets up perfectly, and still tastes excellent!
     
  2. I added 1 coup of toasted pecans to a doubled recipe. mmmm
     
  3. Used a little less sugar, used half butter half coconut oil, used gluten free flour, substituted ground flax seed for half of the flour. I put the full oat mixture on the bottom and made another half batch for the top because it didn't seem like there would be enough to make it thick enough on the top or bottom.

  5. Really, really good! I subbed oat bran for half of the oats and used regular (long-cooking) for the rest, and it turned out great. Not overly sweet to me---just right, really. I did try it with a little vanilla ice cream as another reviewer suggested, and I thoroughly enjoyed it. Thanks for posting.
