  • heat coconut oil in pot over medium heat.
  • add onions, celery, and salt. cover and sweat for five or so minutes, until vegetables begin to turn translucent.
  • add garlic and continue cooking for two more minutes.
  • mix in remaining ingredients and bring to a boil. cover and simmer over low heat for 45 minutes, or until beans are tender.
  • serve plain or over rice.
