ingredients
- 2 cups sugar
- 3 cups flour
- 2 cups cold water
- 2⁄3 cup cocoa
- 2⁄3 cup oil
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons vanilla
- 2 teaspoons vinegar

Cream Filling
- 8 ounces cream cheese
- 1 unbeaten egg
- 1⁄8 teaspoon salt
- 6 ounces chocolate chips
directions
- Mix first group of ingredients well.
- Line muffin tin with cupcake papers.
- Fill cupcake papers half full.
- Blend second group of ingredients.
- Place 1 tsp of filling in each cupcake.
- Bake at 350 for 25 minutes.

I have to admit I was a bit worried that there were no eggs in the main part of the batter, so I did use 2 and adjusted the liquid (I used milk instead of water for the kiddies) accordingly. Worked great! These were very nice cupcakes. Do not attempt to make these without cupcake liners (as I did - they're not often available in Greece). They are very difficult to get out, even out of non-stick pans.
