These beans are my ultimate go to food when I need something comforting, filling and not fattening. I love them with a couple of warm corn tortillas or a ham and mango quesadilla.
- 2 teaspoons olive oil
- 1⁄3 cup onion, chopped
- 1 garlic clove, minced
- 1⁄2 teaspoon cumin
- 1 (15 ounce) can black beans, undrained
- Heat olive oil, onion, garlic and cumin over medium heat until onion starts to brown.
- Add the beans and their juice.
- Simmer the beans covered for about 15-20minutes.
- Stir occasionally.
Muy bueno! Great with cilantro lime rice and pico de gallo!
Oh so simple, healthy and delightful! I ate it with Healthy Baked Corn Tortilla Chips (Homemade). I love the flavor the cumin adds and the fact that I only have to add one spice. I will definitely be making this again!
These are so easy and so good! They almost taste like they have been simmering all day! I love the smokiness of the cumin! Thanks for a great recipe! *Made for ZWT ZINGO*
