This is an excellent side dish, especially with grilled chicken. I don't remember where I got the recipe, but it has been an almost weekly standard at my house.
- Prepare Rice-a-roni according to package directions.
- 5 minutes before it is finished, add the 2 cans of Black beans and the 1 cup of salsa.
- Stir well.
- Cover pan and cook for 10 minutes more.
This tasted okay, but the salsa overpowered the dish. My husband and I took one bite and said it was passable, but neither of us ate anymore of it and that's unusual for him. I will make this again, but with less beans and I'll leave the salsa out.
Excellent supper, mandabears. I used Homemade Rice a Roni Recipe #24476 and Sofrito Recipe #223937 along with chipotle mango salsa. I added some garlic sauteed chicken chunks to Dh's portion to make it more satisfying (in his opinion). Think I'll make a double batch next time and try freezing it so that I have a premade side dish for those harried evenings.
