Easy, tasty side dish.
- 1 1⁄4 cups reduced-sodium fat-free chicken broth
- 3⁄4 cup long-grain rice
- 1 cup rinsed and drained canned black beans
- 1⁄4 cup chopped fresh cilantro
- 1⁄4 teaspoon salt
- Bring the broth to a boil in a meduum saucepan. Add rice. Cover, reduce heat, and simmer 18 minutes or until liquid is absorbed. Stir in black beans and cilantro, cook until thoroughly heated. Stir in salt.
