  • Heat oil in a large soup pot over medium-high heat. Add onion, garlic, and carrots and saute, stirring frequently, until onion is tender. Stir in red pepper and saute for 1 minute. Stir in zucchini, rice, broth,tomato sauce,salsa, water, and seasonings. Cover, heat to boiling,reduce heat and simmer 30 minutes.
  • Stir in beans and corn. Simmer 15 or until vegitables and rice are tender. Ladel into serving bowls and speinkle with cilantro.

We are a Coast Guard Family. I love to cook espcially with my Husband and kids. We like to explore ethnic foods, howwever my favorite cook book is still Kentucky Kitchens because my Granny gave it to me. Cooking also keeps me connected to my Mom Granny and aunts. I only wish they could "taste this" from 900 miles away.
