Black Bean Soup

I got this recipe from a friend of mine. Be sure not to over-reduce the soup, as it can get very salty. Serve over rice or noodles.

Great recipe! I liked the addition of thyme, but limited the amount of oregano, as it is not my favorite. As BEANS are one of my favorites, I added more of them. Thanks for a healthy recipe.

  1. Puree one can of black beans, set aside.
  2. Sauté onion and garlic, over medium-high heat.
  3. Add spices.
  4. Stir for one minute.
  5. Add pureed beans, other can of beans.
  6. Add broth.
  7. Simmer for 30 minutes.
  8. Top with chopped tomato and cheese.
