This is my FAVORITE salsa recipe. It is so easy to put together. I usually use a red onion and sometimes add fresh cilantro
- 1 (15 1/4 ounce) can white shoepeg corn, drained
- 2 (15 1/4 ounce) cans black beans, rinsed
- 2 (10 1/2 ounce) cans rotel
- 1 lime, juice of
- 1 medium diced onion
- 8 ounces fat-free Italian salad dressing
- 1 teaspoon cumin
- mix all ingredients in a large bowl.
- Serve with your favorite tortilla chips.
