Although I love most of the flavors for this quesadilla, I believe the proportions are way off. A light touch is better. Eight ounces of sour cream and an entire bunch of cilantro is excessive and overkill. Someone will have to clue me in to what '1 bunch swiss cheese' is. It was omitted anyway. Recipe could use some sprucing up and then I would be more inclined to star rate it. Reviewed for PAC 2010.

  1. Mash beans, add tomato, cilantro, & olives.
  2. Spread over tortilla, cover with cheese, spinach, and salsa, and top with second tortilla.
  3. Bake at 350 F for 12 minutes until cheese is melted.
  4. Top with salsa and sour cream.
