I had to make a few modifications using what I had on hand. I used regular corn and added about 2/3 cup of medium salsa to make up for not having Mexican corn or chilies. I also added 8 oz. of chopped chicken breast meat. Everyone enjoyed them. Adding shredded lettuce and sour cream (and/or guacamole) is recommend.
Made with chicken (leftover grilled thighs) for Mr. Meat Man, made a couple without for me. We were both happy! I, too, made my own enchilada sauce, and topped with chopped cilantro and a sprinkle of ground cumin. Muy bueno!
Yum! I made with homemade enchilada sauce, included chicken and sprinkled cilantro on the top with the cheese. Great flavor.
Great combo, I love the mexicorn! Definately needs more sauce, and next time I'll sub in some hotter peppers for the chilis. I used some mashed chick peas for the chicken. These were great!
My hubby and I ar not huge Mexican fans but I decided to make this to mix things up a little. We really liked it!! A very solid, cheesy and tasty dish that we've alrady decided we'll put into regular rotation. When I made this dish, I acutally prepared it, froze it and then pulled out a couple of weeks later for a very nice weekday meal after a long day at work- quick, easy and filling. When I froze it, I mixed the beans, corn, chilies, cheese, chicken, hot peppers (we like things spicy) and part sauce and put in one baggie. I took the remainder of the enchilada sauce (this dish really needs the large can of sauce and you really will use all of it) and froze it in a separate baggie. I put the remaining cheese in a separate baggie. Then, I took the tortillas (I used healthy spinach and herb), three other baggies that I had assembled above, and put then all in one larger baggie and placed everything in a throw away aluminum pan, taped recipe on top and everything was ready to go when I was. Everything froze very well and there were no soggy tortillas. Great dish!
This was delicious! I made it with shredded chicken that I boiled with chicken stock, then mixed with salsa. It could have been saucier, so next time I will double the amount of enchilada sauce. Other than that it was very yummy, I even have quite bit of filling left over that I will use for tacos. Thanks!
Tagged in Spring '08 PAC. I've tried several enchilada recipes, none of which have gone over well. Tried these for lunch and only the picky child wouldn't eat them! (The 5 yo loved it, ate his whole enchilada - he thought it was pizza at first. When I said enchiladas, he said, "Enchiladas, yum!" LOL) I used dried, cooked black beans (I think about 1 C dried), no chilies (for kids), added some green onion and chicken. I wish I had more sauce to put on top, but it still tasted great.
