Black Bean & Cabbage over Rice

"This can be a hearty side dish or a meatless main course with a green salad and chunks of rye bread. Regular butter can be used with the same result."

directions

  • Saute the first 3 ingredients until soft, about 15-20 minutes.
  • Add salt and pepper and stir.
  • Add the rinsed and drained beans.
  • Gently saute the beans with cabbage-onion mixture for 10 minutes.
  • Stir in the tomato and simmer for 5 more minutes.
  • Adjust the seasonings.
  • Serve over individual bowls of brown rice, top with yogurt or sour cream and sprinkle with chopped cilantro.

  1. This dish was very easy, fast and quite tasty. I always use dried/soaked/cooked beans rather than the canned, but I'm sure its similar in taste.
     
  2. I loved this recipe. I changed the ghee to one tablespoon of canola oil as ghee (which I like) contains more saturated fat. Instead of a fresh tomato I used canned diced tomato -- not the whole can of course -- I will definitely make this recipe again. Thank you.
     
  3. This is a great recipe, easy to make and healthy too. I used two roma tomatoes instead of one medium tomato.
     
  4. Delightful dish. I didn't have fresh tomatoes so I added a can of diced italian tomatoes. I also added a sprinkle of caraway seed. I served over leftover jasmine rice. This was a wonderful dinner all by itself. I will definitely make this again. Superb recipe.
     
  5. Had this for dinner tonight and even with the addition of coconut, it was pretty flavorless. The texture and appearance was also unappealing. The leftovers are going in the compost pail :-(

Tweaks

  1. This was very good. I accidentally opened a can of kidney beans instead of black beans, so in they went, as did thyme in place of the cilantro. I also threw in a few dashes of red pepper sauce for some heat, and I threw a cup of wild rice I had leftover in the fridge. Delish! Thanks for a great recipe.
     
  2. I really liked this dish. So fast to make and flavorful. I used sundried tomatoes in place of fresh ones and I didn't have any cilantro. Thanks for sharing (Made for "I Recommend")
