- 1 white onion, diced
- 29.58 ml brown sugar
- 14.79 ml chili powder
- 14.79 ml ground cumin
- 4.92 ml ground coriander
- 2 garlic cloves, minced
- 396.89 g can roasted diced tomatoes
- 226.79 g tomato sauce
- 354.88 ml chicken stock
- 118.29 ml orange juice
- 59.14 ml tomato paste
- 453.59 g chicken tenders, cut into 1/2 inch pieces
- 2 (850.48 g) can black beans, drained and rinsed
- 2.46 ml seasoning salt
- chopped fresh cilantro
directions
- Place the oil in a large Dutch oven over medium heat.
- Add the onions and sauté 3 minutes.
- Add the brown sugar, chili powder, cumin, coriander, and garlic.
- Cook 1 minute longer.
- Stir in the tomatoes, tomato sauce, stock, orange juice, tomato paste, and chicken.
- Cover, reduce heat to low and cook, 2 hours.
- Add the beans and the salt.
- Cook 10 minutes longer.
- Serve in warmed soup bowls with a garnish of fresh cilantro.
