A very easy and yummy black bean soup.

This was simple and tasted great. Very healthy and easy to adapt by adding other spices and leftover vegetables in the refrigerator.

Directions

  1. Put 1 can of black beans, 2 cups of vegetable broth, 1 cup salsa, can of green chilies, and 1 tsp cumin in blender and blend till smooth.
  2. Put into a saucepan with the other can of beans and corn (if wanted) and heat over medium heat.
  3. Add lime juice.
  4. Add salt and pepper to taste.
  5. Heat though and enjoy.
