Clean Eating May/June 2009
- 1⁄4 avocado, mashed
- 1⁄4 cup salsa
- 2 ounces roasted chicken breast, chopped (or baked chicken breast)
- 1⁄4 cup low-sodium canned black beans, rinsed, drained and lightly mashed
- 2 small whole wheat tortillas
- Mix salsa with avocado.
- Spread avocado mixture onto center of tortilla from end to end.
- Add beans and chicken on top.
- Tightly roll up tortilla.
Tried this except with a cos lettuce leaf instead of a tortilla - delicious.
