This is from the Spring 2003 edition of Eating Well.
- 2 cups seeded diced plum tomatoes (6-7 tomatoes)
- 1 (19 ounce) can black beans, rinsed
- 1⁄4 cup chopped scallion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon extra virgin olive oil
- 1 -2 teaspoon minced canned chipotle chile in adobo
- 1⁄4 teaspoon salt
- Combine all ingredients in a bowl and stir.
