Black Bean and Pumpkin Chili

This is a recipe from Taste of Home, and apparently you can't taste the pumpkin at all - it just adds a thickness and richness. It is a very mellow flavored chili and great with chicken in it instead of turkey. Another bonus with this soup is the health factor. One cup of this soup has 192 calories and 7 grams of fiber!

  1. In a large skillet, saute the onion, yellow pepper in oil until tender. Add garlic; cook 1 minute longer. Transfer to a 5-qt. slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through. Yield: 10 servings (2-1/2 quarts).
