Made exactly as written and was very pleased with the final result. I also felt very healthy eating it (with no guilt)! Made for ZWT5.

This was very good, and would be great for a potluck. I used whole wheat couscous and only a tablespoon of oil. I also halved the green onions, and used 2-3 times the cumin, parsley and vinegar. Very healthy!

This was wonderful with grilled chicken tonight. I mad 4 servings and skipped the jalapeno. The rest was "By The Book". I love the way all of the flavors work together. I'm a real couscous fan and this is another way to love it. This is so easy to make and the layers of flavors is simply lovely. I think this would be a great stuffing for peppers too.

Loved this!! I mixed lemon/lime juice added extra jalapeno and carrots. This is the first time that I tried the goya salad seasoning. (won't be my last)when I tossed the dressing with the veggies and beans, and started tasting it was kind of hard to stop nibbling and I didn't even add the couscous to it yet!! I used whole wheat couscous. When I mixed it all together it looked great and tasted wonderful. It makes a lot so I will have plenty to enjoy throughout this hot summer weather week. This was easy to put together, economical, healthy and most important, delicious. Thanks again for posting this recipe.

I made this for a work potluck. It was easy and fantastic! If I made it for home I would make it a little more spicy!
