I love this salad. I have also substituted quinoa for the couscous. Great both ways. I too add a bit more lime juice, oil & vinegar to taste, and just one can of black beans. Other than that, this recipe is absolute perfection. This is one I crave and keeps well so can be eaten over 3-4 days so even if no one else wants any I can still make it for myself.;-) Delicious! Excellent staple recipe that you will want to add to your regular rotation. Thanks yooper!

Tasty salad. I served it with grilled steak. I did double the vinegarette as I thought it was too dry.

WONDERFUL--I brought this to my church's potluck luncheon yesterday and it was DEVOURED!!!! Not a morsel left! The only thing I did to mine was double the amounts of lime juice, vinegar, olive oil and cumin. I tasted it the first time and it seemed like it needed just a smidgeon of extra flavor and it did the trick.

I made this for a potluck(in the conservative Midwest, mind you) and it was completely devoured with rants and raves! I'm pretty sure I could eat this everyday! Thanks Yooper!

This is a great salad and stays well in the fridge for a few days. Make sure you season it, as it can be very bland without!

Different side dish that would be great at a BBQ! I used a fresh tomato instead of a red pepper since that is all I had on hand. I also didn't use cilantro b/c I didn't have any! I upped the vinegar and lime juice to make up for the lack of cilantro. I used whole wheat cousous. It was great!
