- 14.79 ml extra virgin olive oil
- 29.58 ml red wine vinegar
- 14.79 ml Dijon mustard
- 4.92 ml cumin
- 78.78 ml chopped fresh cilantro
- 425.24 g can black beans, drained and rinsed
- 198.44 g can white corn, drained
- 59.14 ml chopped sweet onion
- 2 plum tomatoes, seeded and chopped
- shredded monterey jack cheese, for topping (optional)
directions
- Combine olive oil, vinegar, mustard, cumin and cilantro, set aside. Combine beans, corn, onion and tomato. Drizzle the dressing over the bean mixture. Stir together gently to avoid breaking the beans. May be topped with shredded cheese if desired.
