Black Bean and Corn Salad

ingredients
- 3⁄4 cup Italian salad dressing
- 3⁄4 teaspoon Tabasco sauce
- 1⁄2 teaspoon chili powder
- 1 tablespoon fresh lime juice or 1 tablespoon lemon juice
- 1 tablespoon cilantro
- 1 (12 ounce) can corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 medium tomatoes, finely chopped
- 1⁄2 cup finely chopped red onion
- 1 red bell pepper, seeded and finely chopped
- 1⁄2 cup thinly sliced scallion
- 1 garlic clove, minced
- 1 jalapeno pepper, seeded and finely chopped
directions
- Combine Italian dressing, Tabasco, chili powder, citrus juice and cilantro in a jar and shake well; set aside.
- Combine remaining ingredients till evenly mixed.
- Cover salad with dressing and chill at least 4 hours but the salad will be at its best if made the day before serving.
- Serve cool or at room temperature.

WOW..!! I just made this salad and it taste wonderful freshly made, I can't wait to taste it after it sits overnight. It has to be heavenly. I know I'm pushing it as a summer salad since it's not summer yet but dang it, this salad would be great any time of the year and the ingredients are readily available any time. Too bad there's not more stars to give it 'cause I would if I could..Thank you Lvs2cook, youve got a winner here.

This is a very very nice salad with a WONDERFUL flavor..it is colorful.. I did have to adapt a wee bit.. I had no canned corn (except for cream stylle) Soooo I used frozen that I measured in the bean can..a little less than half of the can added this to the beans in my colinder and rinsed both..worked wonderfully..and seemed tobe the perfect balance there is a HUGE problem with this recipe..be warned it seems to disappear I doubled this recipe because I was taking it to our church lunchen after services. it was the 1st thing gone was so nice to take something that was so easy... colorful..and very tasty...& not the usual church lunchen stuff.... I've already been asked to please make this again for our next one and many wanted the recipe.. more than the 10 copies I had printed and taken with me.. so a big big BIG hit with all and a recipe I will be making many times so Lvs2Cook a big thank you from me to you for making me look so good to my church family made this again to take to a family gathering last night...AGAIN it was gone 1st..and it isn't because I make small amounts....I doubled it both times...wonderful Easy GREAT tasting....I did stay with the frozen corn as I feel it works great for me AND it is what I buy and have handy..love all the textures in it too..try this one you will love it
