Black Bean and Corn Dip With Cilantro and Lime

Ingredients:

Yield: 8 cups

• 1 3/4 cups white corn
• 1 3/4 cups corn
• 3 1/2 cups black beans
• 1 bunch cilantro, chopped
• 1 red onion, small, chopped
• 1 lime, juice
• 1/4 cup olive oil
• 1 tablespoon garlic, minced
• 1 jalapeno, seeded, minced
• 2 teaspoons cumin
• 2 teaspoons cinnamon
• 1 teaspoon coriander
• 1 teaspoon paprika
• 1 teaspoon curry powder
• 1/2 teaspoon cayenne pepper
• 1/4 cup brown sugar
• 1 dash hot sauce
• salt and pepper

Directions:

1. - Simply mix the ingredients as described. Tweak the spices / sugar / olive oil ratio to suit your taste. This stuff is increeeeeeeeeedible!

I was skeptical at all the spices in this, however, it really tasted great and was a hit at the 4th of July. The cinamon and brown sugar make this dip a little different and interesting. I scaled this down quite a bit from 8 cups, and so estimated all the spices. By about 1/4. Also, I found frozen mix of gold/white corn kernals that worked great.
