- 29.58 ml Dijon mustard
- 29.58 ml white balsamic vinegar
- 14.79 ml sugar
- 78.78 ml oil
- 1419.54 ml cabbage, shredded
- 2 red bell peppers, sliced
- 1 scallion, thinly sliced
- 59.14 ml parsley, minced
- salt and pepper
directions
- In a small bowl, combine mustard, vinegar, sugar, & oil.
- In a large bowl, combine cabbage, peppers, scallions & parsley.
- Add dressing to veggies & toss well to combine. Season with salt & pepper to taste.

I thought this would be a great way to use up some extra cabbage I had - next time I will buy cabbage specially for this salad! I used 1 tablespoon agave nectar instead of white sugar and the next time I make it I will use at least 2 or 3 scallions and I will also cut down on the oil. It simply doesn't need that much. Those cutting out sugar altogether could easily sub a date or two as sweetener. I would also slice my cabbage better/thinner/smaller. This is a definite keeper! Thanks for posting!
