Bircher Muesli

- 45 g dates
- 2 -3 medium apricots
- 2 medium peaches
- 2 small nectarines
- 3 plums
- 50 g sultanas
- 2 bananas
- 2 apples
- 2 cups strawberries
- 1⁄2 cup almonds, sliced
- 2 dried figs
- 45 g coconut
- 2 cups oats
- 1 teaspoon salt
- 2 tablespoons honey
- 1⁄2 cup milk
- 1⁄2 cup brown sugar
directions
- Soak oats in milk and set aside to soften.
- Dice up all the stone fruit and then divide into 2 piles. Squash mash the first pile into a bowl and add the second pile on top.
- Cut up the dates, bananas and figs into small pieces and add to mix.
- Add coconut, salt, honey and the softened oats. Mix well until all combined and sprinkle with brown sugar to taste.
- Best left in the fridge overnight but can be eaten immediatly with cream or yoghurt.
