I tweaked this recipe from a healthfood store I worked in. Ask your butcher to grind some bacon with your beef of choice in a 1:4 ratio, this makes blending the two much simpler. Because these contain pork, be sure to cook them well.
- 2 lbs beef
- 1⁄2 lb pork bacon
- 1 1⁄2 tablespoons cajun seasoning
- 1 tablespoon salt
- 5 -6 tablespoons coarse black pepper
- 1⁄2-3⁄4 cup blue cheese, crumbles
