Big John's Bread Pudding With Whisky Sauce

Bread pudding is the most popular classic New Orleans dessert. Every cook has their own recipe, this is mine.

  1. Preheat oven to 350 degrees.
  2. Add sugar, vanilla and spices to eggs (mixed with egg whites from sauce) and beat.
  3. Add milk and butter, beat again.
  4. Stir in pineapple, coconut and pecans.
  5. Place bread in a large buttered baking pan and pour beaten mixture over top.
  6. Let stand for 15 minutes.
  7. Bake until the center becomes firm.
  8. SAUCE: Cream butter and sugar over medium heat until all butter is absorbed.
  9. Remove from heat and blend in egg yolk and vanilla.
  10. Pour in Whiskey while stirring constantly.
  11. Sauce will thicken as it cools.
  12. Serve over warm bread pudding.
