Spam and Roasted Pineapple kabobs with Teriyaki dipping sauce

  1. Bring remaining 8 oz of teriyaki sauce to a simmer; add teriyaki and corn starch mixture while whisking; bring to a simmer for about a minute; remove from heat and set aside.
  2. Slice fresh pineapple int thick slices, grill over open coals then cut into large chunks.
  3. Slice Spam into two slices, Grill over open coals till well browned then cut slices into a total of 18 cubes.
  4. Skewer a chunk of grilled spam with a chunk of grilled pineapple.
  5. Arrange skewers on a platter with Teriyaki sauce in a dish for dipping.
  6. Sprinkle Chopped cilantro across skewers and serve immediately.
  7. add 4 ounces of the teriyaki sauce to the corn starch.
