    Ingredients:

    Serves: 2-3

    Directions:

    1. 1
      Melt the butter in a cast iron skillet, add the peeled,cored and sliced apples and saute until tender. DO NOT OVERCOOK.
    2. 2
      Beat the eggs and gradually add the milk and then the flour and salt.
    3. 3
      Pour this batter over the apples and return to the hot oven.
    4. 4
      Bake until puffed up and golden - maybe 25 minutes.
    5. 5
      Cut a wedge and serve with syrup and bacon and/or sausage.

      Easy, quick and nice blend of cinnamon and apples, great for a crowd. Can see using other fruits and berries too. I probably got mine a little to thick, more like a cake but very good with butter and syrup.

      What a lovely recipe Hal. We enjoyed this treat very much. It was quick and easy to make and tasted like a warm apple pie. The pancake was light and fluffy with a terrific apple topping, slightly sweet with the right amount of cinnamon. Thanks for sharing your recipe. Made for Spring Pac 2014.
