ingredients
- 3 bananas, ripe
- 3⁄4 cup honey
- 1⁄4 cup butter, melted
- 1⁄2 teaspoon baking soda
- 1 dash salt
- 1 1⁄2 cups whole wheat flour
directions
- Mash bananas with a potato masher or fork.
- Add butter then baking soda, flour and honey.
- Mix well.
- Pour into lightly greased bread pan.
- Bake 350 degrees for 1 hour.

This is our go to recipe for both banana and pumpkin bread (where I substitute pumpkin puree for the bananas). I appreciate that it doesn't call for eggs since my daughter is allergic to them. I think of the Big Bird recipe as a starting point. I usually use granulated sugar (3/4 c.) Plus a bit of liquid for the banana bread. For the pumpkin muffins, I add cinnamon and sometimes nutmeg.

I liked the idea of an egg less banana bread and the use of honey. It looked great when it came out of the oven. However, it fell flat a few minutes after that and we were left with an almost raw bread. That was after baking it for nearly 15 more minutes and checking it with a toothpick. I also thought the honey flavor was a bit too strong.

I love my married life and cooking for my husband, Jason! Jason is such a trooper in that he will try just about anything I cook, unless it is liver or contains mushrooms. Finding new recipes that are not to time consuming, are great for our busy lives. I love meeting people that can cook up a good dish that does not include bachelor meals like grilled cheese or hotdogs. (Just kidding....a quick hot dog meal is perfect for hot days!).
I tried my hand at canning and so far it has turned out well. Thanks to all of you that have posted a great recipe for canning!
