I have been looking for a hearty garden vegatable soup. After combining a few recipes this is the end result. Tons of veggies and flavor ! A hit with my roommates.

  1. heat oil in stock pot over medium heat. Add onion, celery, garlic and seasonings. cook until onions are translucent.
  2. Add broth, tomatoes and juice, tomatoe paste, and 3 cups water. Bring to a boil and let simmer for 20 minutes.
  3. Add vegetables and simmer for at least 30 mins before serving. Add more seasonings to taste.
  4. The longer it simmers the better. Enjoy !
