Here's a refreshing summer drink to serve on your patios and screened porches this summer!
- ice, 1/2 blender full
- 8 fluid ounces Coco Lopez or 8 ounces cream of coconut
- 8 fluid ounces rum
- 4 fluid ounces banana liqueur
- vanilla ice cream
- fresh pineapple slice
- Combine first 4 ingredients in blender and fill remainder of blender to the top with vanilla ice cream.
- Blend well.
- For Pina Coladas: Omit banana liqueur and substitute 1/2 cup crushed pineapple.
If there were 6 stars this one would have it !!!!!!!!!! We're hooked.
Forget the Ice Cream...You don't need it...they were rich and creamy without it...I had been in St. Lucia and had bought some Banana Liquor there and used it for this recipe...I also used coconut rum....fabulous
"Mom42's DH" Great flavor but I added Bananas and strawberries and left out the ice cream. Bev makes a mean Daiquiri.
