- 1 cup mayonnaise
- 1 tablespoon chopped fresh parsley
- 2 tablespoons chopped pimento stuffed olives
- 2 tablespoons ketchup
- 1 teaspoon finely chopped onion
- 1⁄2 teaspoon paprika
- 1 hard-boiled egg, finely chopped
directions
- Mix all ingredients.

This is the one I make..except I don't use the hard boiled egg. It is, bar none, the best thousand Island dressing I've had. The chopped pimento stuffed olives make all the difference, they are so much better than the pickle relish dressings. Besides salads, I use it on hamburgers as my "secret sauce" and on reuben sandwiches. I found this recipe in Betty Crockers New Cookbook dated in the 1950's!

This was okay, but as far as dressings go, the taste of my favorite commercial brand is much better. Dollar-wise, this dressing was a big loss for me. I ended up throwing most of this out a few days after I'd made it. Sorry, but I just don't think that the boiled eggs in this can stand a longer test of time (bacteria-wise)...The olives, however do give this dressing a nice twist.
