Betty's Breakfast Cookies

"While on an annual camping trip a dear friend made these cookies for our Potluck Breakfast and they were a hit! I have yet to make them that someone does not ask for the recipe! She did not list servings or yield so they are guesstimates based on my recollection."

  • Preheat oven to 350 degrees Fahrenheit.
  • Beat butter and sugar together until creamy; beat in the egg.
  • Add flour and baking soda; mix well.
  • Stir in cooked and crumbled bacon, cornflakes, and raisins.
  • Drop by rounded Tablespoons onto an ungreased baking sheet, 2" apart .
  • Bake for 15 to 18 minutes or until lightly browned.
  • Best served warm.
  • To make ahead of time, bake them and put them in the refrigerator.
  • Microwave cookies on a paper towel until warm before serving.

<p>I live in the San Francisco Bay Area, in California. I am now a stay at home mom after trying desperately for 9 years. With the love and generosity of my sister-in-law who acted as our surrogate we now have a beautiful little boy, Ian. I love to camp and go jet skiing with my husband and our families.
