I used unsalted butter, buttermilk and canola oil. I then whipped it in my Kitchen Aid until it got to the right consistancy. I used this "butter" for Boursin cheese Spread Boursin Cheese Spread. It taste great. I froze the rest for a later recipe. Thanks for sharing.

Great stuff! Very soft consistency. Be sure to whip until smooth. I used a Kitchenaid to combine canola oil, unsalted butter and lowfat buttermilk plus a pinch of salt. My son said this tasted even better than butter. Thanks for sharing the recipe! I'll be making this often!
