Better-For-You Buffalo Chicken Bites

  • Preheat oven to 375 degrees. Crush potato crisps completely and, in a small dish, mix with cereal crumbs. Add a dash of each of the seasonings and mix well.
  • Place chicken pieces in a separate dish, and cover and toss with Frank's RedHot. Spray a baking pan with nonstick spray. Give each chicken piece a shake (so it's not dripping with RedHot), and then coat it evenly with the crumb mixture.
  • Lay the battered nuggets on the baking pan. Place in the oven, and bake for 10 minutes. Then flip the wings over, and return them to the oven for 10 more minutes, or until outsides are crispy and chicken is cooked throughout.

  1. So, I didn't have any of the potato chips so I subbed panko--liked the combo of the spices with it and cooking time/temp was perfect. yum!
     
  2. These are great! I live in Germany so we don't have all the ingredients. I used Shreddies cereal, which is sort of like Fiber one and paprika chips. I didn't have any onion or garlic powder, but I think the paprika chips had enough. I also added an extra dash of paprika, because my boyfriend loves it. I broiled the chicken pieces at the end just to get them a little crunchier. Great recipe, especially since I had been dying to have some buffalo chicken tenders here!

  4. Another recipe that was a huge hit at our home. I added skim milk to the frank's redhot to make it more to my family's hotness toleration.
