Wow this recipe is AMAZING! I didn't have pimentos so I omitted them, but I added a couple of squirts of SriRacha. I was a cheese lover before I went vegan, but I would prefer this to any jarred nacho cheese. Seriously if you've been meaning to try a non dairy cheese sauce just go ahead and make this.
This is awesome!! I didn't have pimento so I roasted half a red pepper, subbed half the water for canned coconut milk, used a little less lemon, half the salt and double the nutritional yeast and it's amazing. The red pepper brings so much great flavor.
Love this recipe! But, because I'm lazy, I don't put on the stove. I just let it run in my Vitamix for about 5 mins and it's steaming warm and perfect texture:)
This nacho Cheese is awesome! make sure to keep stirring on the stove. I used a stick blender to keep the cheese moving, it also help puree and make ultra creamy.

This recipe went down a treat with my family. I omitted half a cup of water in a bid to cook it in less time. Next time I will add a bit less salt as I found it a bit on the salt side. Overall, a keeper!
EXCELLENT! I soaked my cashews overnight and I doubled the amount of garlic and onion powder. I also added Cholula Hot Sauce to it when I served it to give it even more Tex-Mex flavor.

Made an account just to review. Amazing. A high powered blender of processor is a must or you will get chunky weirdness. I added a can of green chilis and then chopped jarred jalapeno to the finished product. Best the the day after you make it. Trying this with an eggplant base next to cut calories. Thank you. We really couldn't tell the difference once it wad done from real nacho cheese! Yum
So incredibly good! I followed the recipe but added some sriracha at the end. Delicious. My family prefers this to regular cheese!
