Best Soft Peanut Butter Cookies

"I made this recipe when I was craving peanut butter cookies. Everyone who tried them loved them because they were so soft! I made mine tiny bite size cookies and the recipe made a bunch."

  • Preheat oven to 325 degrees.
  • Combine flour and baking soda in a small bowl.
  • In a separate bowl, melt 1/2 cup butter in microwave.
  • Add 1/3 cup sugar and 1/3 cup brown sugar to the melted butter and cream all together.
  • Add the other 1/2 cup butter to your prepared butter/sugar combo and mix.
  • Add rest of sugar, brown sugar, and the peanut butter. Cream well.
  • Add egg whites and vanilla to the butter and sugar mixture and combine once more.
  • Gradually add flour mixture to your wet mix about 1/3 cup at a time until all the flour is combined.
  • Roll dough into round balls of any size and place on baking sheet. Bake for 8-10 minutes.
  • Let cool on baking sheet for 1-2 minutes and then remove to a cooled surface. ENJOY!

  1. Chose this recipe because of the chef's bio, which was terrific; great and inspiring to see younger generation so happy with the simpler things in life. Cookies were delicious; my 4 yr old loved them. She helped to make them, recipe was simple enough. Followed recipe but subbed all organic ingredients on the list and did cut the sugar back just a bit and used turbinado sugar, since she would be eating a lot of them. We will make these again...nice texture; great flavor. Best wishes to you and your endeavors!
     
  2. I love this. Generally peanut butter cookies come out so dry. These are very moist and sugary. They could probably use a bit more peanut butter flavor, but I really hate to mess with a good thing. The texture is just right. I used my medium sized melon-baller to scoop out the dough and it worked beautifully. The dough slipped right out and the cookies were between 1.5 and 2 inches in diameter.........2 big bites.

  4. Made for PAC Spring 07! These were very soft and good. Since I only have one cookie sheet, I used my non-stick griddle as a stand in for the second pan. It was interesting to me that the cookies on the griddle were not only soft, but had a nice chewy denser bottom. They were also on the lower rack and that may have had something to do with it. I rolled up balls that were about 1 inch around and they made cookies that were about 2 inches around. I thought they would spread out of control so I only put 20 to a sheet....they did not spread as much as you would think with this much butter in a recipe. I did not grease my sheets because the cookies were plenty oily enough not to stick. I made 2/3 of the recipe last night and saved some to make with my youngest daughter today (fun fun) so I'm guessing this batch will make about 50 2 inch cookies. These are a little too soft when warm, but so good! Thanks, Christine!

I'm Christine, I'm 16 years old and a junior in high school; I just recently moved to Salina, Kansas from Wichita with my mom, younger brother, and 2 cats. My life consists of school, work, and theatre. Moving to a new town and a new school half way through high school turned out to be a great event and I am very happy with my new life. I work at Papa Murphy's Take and Bake Pizza and absolutely love my job. It is the perfect job for me at this point in time. Since the town is pretty small, the shop has become a favorite and we have lots of regular customers which is awesome. If you haven't ever had Papa Murphy's before then you should most definitely try it because it is the closest you can get to homemade pizza without making it at home! As a first hand source, I can tell you that the dough is all made, cheese shredded, and veggies cut all in-store. My favorites are the Papa's favorite, gourmet veggie, and cheesy bread! I just love experimenting and creating new tasty combinations, but I also get to take home the mess-ups:) I have already decided that I want to be a diner owner and baker or someday (or something along those lines). I don't know if I'll get there, but that's what I wanna do. My mom has taught me everything I know, she supports me, and she always makes sure I'm happy. I could never thank her enough for what she has done for me. I also watch TV, not much, but there are a few shows that I absolutely have to watch (American Idol though it's over now and Hell's Kitchen). I also love Food Network and HGTV! I love Christmas, Thanksgiving, and Easter; mainly because those are the 3 holidays that my entire family gets together on and they're the big food holidays. I'm also very lucky because I have already traveled a lot inside the country mainly, but I have been to 3 of the islands in the Caribbean and Mexico. My absolute favorite places so far are California, Mexico, the Bahamas, Florida, Virginia, Colorado, and Oklahoma. When traveling, I love anything outdoors; skiing, the beach, amusement parks, national parks (Yosemite, Mesa Verde!). I used to think my mom was trying to make our summer vacations all 'educational', and now I can see that she WAS trying to teach us something, but I look back on those times and realize how great the places were. Williamsburg in Virginia and Eureka Springs in Arkansas are two of the cutest towns I have ever seen!
